Due to their vibrancy and freshness, most English still wines are released young and drunk within 2 years of production, however, the winemakers at Balfour are intent on proving that English wines also have the potential to age gracefully. To showcase this, a thousand bottles of Skye’s 2017 were held back and aged for an additional 4 years in the winery before re-releasing them this summer. The result is a wine that is still identifiably English, with remarkable freshness, yet with added honeyed complexity from the extended bottle ageing. A wonderful summer white to enjoy in the sunshine.
Tasting Note: Gently aromatic and fresh, displaying hawthorn, white flowers, apricot and dried herbs. A light green-gold colour. Un-oaked and dry with a refreshing backbone of English acidity. Citrus, ripe apple and stone fruits predominate. A vinous and well-structured wine, with a crisp, clean finish.
Winemaker’s Food Pairing: Enjoy with scallops and pan-fried fish, but also roast chicken and risotto dishes.
